Tomato Salad

I’ve been eating this salad a lot lately. Tomatoes are getting good and tasty and we need to savor them while they last. They are one of those fruits/vegetables that can really blow your mind. The difference between a good one and a bad one is night and day. I came across these good ones at Green City Market. Big, juicy heirlooms in an assortment of colors that make for an elegant arrangement on your plate.

The sliced tomatoes found a good friend in corn, freshly cut off of the cob. The two were dressed with a sharp champagne vinaigrette which really pulled everything together. Each bite tasted like summer and made me so happy to be enjoying the warm summer weather when I can find it.

You may have noticed that I have been a little M.I.A.— I apologize for the shortage of recipes around here. Much has been happening that is keeping me out of the kitchen. The most exciting of which is that Bryan and I are in the process of buying our first place! I had no idea how much time and energy it would drain out of me. For the first time ever, I am obsessing over kitchen counters and coffee tables rather than croissants and BLP’s [1]. The good news is that we found a great place and I will tell you all about it soon. I am excited to set up a new kitchen and share more culinary adventures with everyone. In the meantime, posts should be resuming at a more regular rate now! Thanks for your patience (I’ll be asking for it again as we get closer to closing/moving)!!

Tomato Salad

There really isn’t a recipe here, just an idea. Slice some heirloom tomatoes and arrange them on a big serving plate. Throw some fresh corn kernels on top and some slices of fresh basil. I topped it all with a simple shallot vinaigrette made with champagne vinegar. It was awesome.
