Risotto with radicchio + mozzarella was one of the only things one of my old (Italian) flatmates could make – but it was great. She used red wine and didn’t add raisins. So delicious.

Nice! I just made a version of this with red wine, radicchio, and smoked mozzarella. Adding raisins is a really interesting variation.
