    Alinea, by far the most interesting dining experience I’ve ever had. 24 of the coolest courses I think I’ll ever experience :) But there was also this amazing meal at a little french bistro in NYC that I wish I remembered the name. Food was like we were in Paris and it was the best company ever.

    Favorite object in your kitchen?

    My zester :) One day it will be a larger more glam object like a kitchen aid, alas there is no space in my kitchen now…bummer

    What are you scared of in the kitchen?
    my stove, it’s electric. I just moved and am use to a gas stover.

    I like to cook for others.

    What country would you move to for the food?

    France :) I adore visiting there and the food experience is incredible. I’d like to transport myself there right now.

    hmmmmm….raspberries? not sure of the reason but it’s the first thing that popped into my head!

    A glass of white wine, pears, brie, salami, sharp white cheddar, strawberries and grapes. YUM!

    something decidedly spicy that will cause me pain. i will eat all cheeses but probably wont enjoy most of them, but i will eat them.

    this place in verona called the last supper was pretty incredible. twelve courses or something. also an outdoor meal on a vineyard in tuscany with singing men and lamb. or anytime i make meatballs for a crowd.(can’t believe you haven’t had them yet timmy. and can’t believe i haven’t countlessly mentioned how much fun this is! still!)

    What won’t you eat? Pate/fois gras. Scrapple. And I’ve never had it, but blood sausage looks so disgusting I have to pass.

    Most memorable meal? At Elaine’s on Franklin in Chapel Hill, NC, I had perfect pork tenderloin on a sweet potato waffle with maple butter and bacony greens. I don’t even like pork that much, but this meal was just perfectly constructed and totally delicious.

    Favorite object in your kitchen? My Cuisinart coffee maker. I don’t cook with it, but it makes me very happy.

    What are you scared of in the kitchen? Ditto on frying things, and also pie crust. :(

    What country would you move to for the food? Italy.

    If you were to come back as a fruit or vegetable, what would you be? A peach. I bruise easily, but under the right conditions I am just about perfect. And juicy.

    What’s for dinner? I actually made a Rachael Ray recipe (cringe) that was DELICIOUS – a chicken marsala and rice dish. Given where it came from, I was pleasantly surprised.

    My flour canisters. I waited 6 months until I found the perfect ones and I love them (and have recently bought 2 more)

    Complicated pastries. And pie dough. I haven’t mastered it yet. But I will.

    I like to cook for others.–Me too! Stay our of my way but help me eat!

    A juicy strawberry, the first at the market of the season.

    What’s for dinner?

    Leftover bean soup from the freezer with toast made from homemade bread. It was quick and tasty.

    Can’t (medically) have nightshades–potatoes, tomatoes, eggplant, peppers. Other than that, don’t like eel much but would eat it at a diplomatic dinner just to keep the peace.

    Filet mignon at Fisherman’s Inn in Elburn Illinois. (best breakfast in Sault Ste Marie, in case you were wondering.)

    The fridge? Keeps all the lovely spoilables less spoiled??

    I cannot make a freakin’ pot roast. I’m not afraid of it, but still! How hard can it be? I follow the directions and make a tough tasteless hunk of uck.

    Depends on their style. I’m a seat of my pants; my best friend is by the book. If I am mentally prepared for her to measure a dash of some ingredient, I do okay. Otherwise, let me be; just sous chef me!!!

    Yeah, Italy. Put on 12 lbs in one month there……what a good time!!!

    I would be a perfect summer muskmelon.

    Tomorrow’s dinner? No idea. It’s not tomorrow and it’s not dinnertime tomorrow.

    What won’t you eat? Tripe, or any organ, really. That includes the poison filter we call liver.

    Most memorable meal? I’ll always remember a layered phyllo and roasted vegetable stack served over baby greens with an unusual curried viniagrette and lots of edible flowers at Vista Clara Spa in Galisteo, New Mexico, just outside of Santa Fe. Second is the French Hen in Tulsa, Oklahoma, which surpassed all of the fancier ‘well-known’ restaurants I’ve encountered in my travels.

    Favorite object in your kitchen? On the high end, my KitchenAid Proline espresso machine, and Shun Mandoline slicer. The low end, my simple little ‘Fred and Friends’ funky silicone spatula and my metal tea bag squeezer. I can have FOUR favorites, can’t I?

    What are you scared of in the kitchen? I’m concerned about the health risks related to teflon pans, yet I still have and use them.

    Do you prefer to cook alone or with others? Alone but sometimes with an audience.

    What country would you move to for the food? I would stay right here in the US. We have access to some of the best cuisine from France, Italy, Asia, South America, etc. And best of all, we can get many different ‘fusions’ of all of the above. We just sometimes lack the ambiance of being there, immersed in their language, music, culture, etc.

    If you were to come back as a fruit or vegetable, what would you be? I would be a passion fruit, because I would bear lovely nectar, and be accessorized by one of the most beautifully complex flowers you’ve ever seen.

    What’s for dinner? I made a filling of softened cream cheese, mashed avocado, onions, jalapenos, black beans, cilantro & garlic. Then I realized I didn’t have any tortillas, so I ‘glued’ little wonton wrappers together with egg (since I was also out of larger spring roll wrappers). I made them just like egg rolls, in the deep fryer, but using coconut oil. Served with salsa (and Tim, here’s the best part) a scoop of Arroz Verde on the side. MMMMM!! MMMM!

    I’m not sure? I’m just glad I’m not allergic to anything. There have been a few foods I’ve managed to avoid, like haggis and head cheese (and I’d probably eat them if someone said “here try this”), and there are some that would revolt many but I’m slightly curious, like casu marzu.

    Most memorable meal?

    That day I tried to cook fufu without knowing what it was.

    Favorite object in your kitchen?

    I’m still learning how to use the toys in my kitchen. Currently I’d say the strange things I do with a blender are keeping me amused.

    What are you scared of in the kitchen?

    Baking. I’m clueless when it comes to pastrys. I got chided yesterday for not having a measuring cup.

    Do you prefer to cook alone or with others?

    I like to cook for others. I try to convince them to bring wine and wash dishes, and I’ll cook for whoever shows up.

    What country would you move to for the food?

    Surinaam? Korea? There are a lot of things that I’d like to be able to eat more often that are hard to acquire locally.

    Eh, I’m not sure? A tamarind?

    Last night was Indian food, but what I like cooking more than anything is soup. A good curry is a close second, though, but I’m still not too confident with getting the right proportion of spices.

    just one?! here’s where it gets hard for me. i loved my birthday lunch last year at Robert’s and my parents gave me a lot of great resturant experiences while i was growing up. then there was the dinner at Anneke Jans Romain set up last year. i think some of my favorite meals were with family and friends outside on our little deck in Maine last summer. good fresh food under a canopy of leaves. sigh…

    because i went sooooo long without one in this country, “un couteau qui coupe”! (“a knife that cuts”) and i love a big wooden cutting board.

    i can’t think of anything i’m scared of in the kitchen. honestly.

    mostly alone. this is a new realization for me but cooking is along the lines of mediation, i get in a groove and i’m somewhere else. maybe if i had a bigger kitchen; i love the idea of the family gathered around.

    What country would you move to for the food?

    i don’t know about moving to but i’d love to visit the Scandinvian countries for the food and maybe Spain, Portugal, and Italy. but we have some awesome variety in the U.S. and we sell ourselves really short on that note.

    a nectarine.

    This is tough. Since moving to the east coast recently after living in CA/AZ my entire life I have realized that atmosphere is a huge part of the dining experience for me. I so miss being able to sit outside to eat for 90% of the year – whether in my backyard or on a restaurant patio. As much as I care about food, I think any meal can be magical with great weather and a sunset in the background.

    Cast iron skillet and wooden spatula

    Elaborate pastry-making. Which is why I am a cook, not a baker ;)

    The outcome of a newly invented recipe.

    most memorable meal – not for the food but for the desert, the waiter came out with a tray (at Windows on the World – in the World Trade Center) and I was trying to figure out what was sparkling, it was my engagement ring – a proposal and meal that can never be had again

    Favorite object is a tough one, love my Kitchen Aid stand mixer but would definitely miss the microwave

    scared of Pie crusts but must master them for the love of a great pie

    prefer cooking alone (too many cooks etc)

    will never forget the wonderful fresh simply made food in Italy

    fruit or veg is definitely a tough one, Nothing satifies like cold juicy sweet watermelon in the summer but then again the perfect peach picked right off the tree is another delight

    It surprisingly was not all about the food. My Sweetie when we were probably just a couple of years into knowing each other put me to bed in the early afternoon and then went to the kitchen to cook. I could tell he was cooking something. He came upstairs at one point to check on me. He then placed a shower curtain over the duvet. It was about 10 minutes later he arrived with a giant bowl of pasta and home made tomato sauce and two forks.

    There is this little restaurant in Jaffo/Tel Aviv, on the Marina where the fisherman come in from a days work to dock their boats. This place has 20 tables right up against the water and gets first pick of the days catch. The inside of the restaurant proper looks only slightly classier than a cafeteria and has a customer base of fisherman during the day. At night, the 20 tables outside are candlelit under a canopy with only the flapping of waves and wooden fishing boats as a soundtrack. Its pretty magical. The fish, general grilled, are the freshest you will find and everything on the menu is damn good.

    Favorite object in your kitchen?
    My 8 inch Chefs knife, I use it like 20 times a day!

    What are you scared of in the kitchen?
    Losing a finger to my 8inch Chefs knife. Actually, I think I am way more afraid of my pairing knife. That suckers small, but I’m not fooled. I’ve got my eye on him.

    Do you prefer to cook alone or with others?
    I have to go with Tim on this one, for others. Alone, for others. I even like cleaning up my own mess, although I do a appreciate the company of a good towel dish dryer.

    FRANCE. South France, along the Mediterranean.

    I never have an answer for these… ummm… Garlic Scapes are pretty cool looking, are harvested around May/June, so that works for me.. and they make a pretty tasty white bean and garlic scape dip. Plus they are all curly and wild. Actually, wow, I think we found it, Garlic Scapes. Mild, curly, May baby.

    Moroccan and cocktails at Mogador on St Marks. I cook most meals, but you can def find me here at least 3 times a week.

    Ohh, the Cliff Cafe in Santa Cruz, CA. I used to live near it in college. I took my now husband there for breakfast the first time he spent the weekend with me. He ordered the tofu scramble, and I knew he was special!

    The food is all so fresh, delicious and healthy. It was the first breakfast place I had ever gone to that used olive oil and homemade jam for toast.

    My cuisinart food processor. I use it 2-3x a week. It makes everything better.

    Cooking fish. I have cooked a few great fish dishes, but I just want a nice piece of baked fish like I eat in French restaurants. I am petrified that I will overcook an $8 piece of fish!

    I like cooking myself, in a kitchen full of friends. My kitchen is really small.

    France, France, France! For more than just the food, really— I like their relationship with food and eating…with life. <– wow I cannot say it any better. We got back from Paris a week ago and I wanted to go there to renew my faith in being a human and eating food. I just signed up for my CSA, and I am using the French way of looking at food and dining to really learn to love food as a ritual, rather than a stuff fest.

    I love carrots. They make everything better. You can add them to cookies, spaghetti sauce, bread, dips, anything. They are so versatile. My dogs love to snack on them- they’re adorable, great color, super healthy.

Maybe it’s because it’s so fresh in my mind, but I had the most AMAZING meal at the Georgia Organics Annual Conference in Decatur this past weekend– there were gingered beets, pickled shrimp, biodynamic butternut squash, turnip greens, honeycomb, pecan pie, wiskey hard sauce…mmmmmm. It was all cooked to perfection. A lot of local chefs, including Scott Peacock, did the cooking.

    Favorite object in your kitchen? My cast iron skillets. I also love those le creuset pots I inherited from my grandma, but I find that they mostly sit on my shelf.

    What are you scared of in the kitchen? I agree, frying is terrifying. It’s such a shame, though.

    Do you prefer to cook alone or with others? I like to cook alone, but I need there to be dinner guests. I don’t cook much when I’m eating alone.

    Honestly, probably my graduation dinner at Bodard Restaurant in houston, Texas. We ordered the 5 course meal for 7 people and there were so many little, flavorful dishes with bright colors and flavors. All my favorite people and just so many delicious things I’d never tried before.

    Favorite object in your kitchen?

    My food processor, even though I hate to clean it.

    What are you scared of in the kitchen?

    Spending a lot of time on something that doesn’t taste as good as what I could’ve bought in the store, like bread or biscuits (kneading! agh, what?), artichokes (how do you clean these?), and making eggplant taste good. can’t seem to do it.

    Do you prefer to cook alone or with others?

    Like you, Tim, I like to cook for others too. Just so much better that way! But I do prefer to make everything myself…so it can be just so. Most of the time, not always.

    What country would you move to for the food?

    To be honest – maybe India. I love mangoes, but the sheer variety – I am sure I would never taste all the dishes if I spent the rest of my life traveling there.

    If you were to come back as a fruit or vegetable, what would you be?

    Mangoes? I would have a good, solid core :)

    What’s for dinner?

    Maybe broccoli salad? I love the one with onions, sunflower seeds, bacon, broccoli, raisins, and mayonnaise in Amanda Hesser’s book Cooking for Mr. Latte. But it’s going to rain in ny today so it might end up being something super simple, like grilled cheese with heirloom tomato and Orangette’s tomato soup with cilantro.

    PS I went to milk & honey cafe when I was in chicago for a wedding, and it was so so wonderful. My boyfriend thought I was crazy for getting off of the El early simply to go that cafe but he retracted and thought it was awesome it worked out so well. If I ever opened a restaurant, I hope it would have the same sensibility as that place. Your taste is awesome, Tim!!!

    This is an interesting question because i’m pretty much open to eating anything – i’ve eaten organ meats, whole sardine, pigs feet – stuff i would never imagine i would eat as a child. However, I will NOT eat venison (deer) – sorry, all i see is Bambi – it would be like eating a dog. I grew up in River Forest, IL right by the forest and deer would always come in our back yard. Couldn’t do it. I probably wouldn’t eat cow’s brains (mad cow – seriously). That guy on Bizarre Foods eats a lot of things I probably wouldn’t. Things that come to mind that he’s eaten: Puffin (too cute!), [insert animal here] testicles, eyeballs, and any kind of intestine. Also I will not eat a chile straight up (see #3)

    #5 Most memorable meal?
    This is a hard one. Since I live in NYC, I’ve had amazing meals here: Daniel, Jean Georges, Blue Hill Stone Barns, Picholine, Ko, Cafe Gray (now closed – I’m so heartbroken) and Wallse (Blaue Gans, it’s sister restaurant, is my “go to” restaurant.) Of those, Ko was probably the best experience – it had JUST opened (i seriously can’t believe I got a reservation the first day the website opened – it was crazy), the food was spectacular and it was so cool to watch the chefs create every plate right infront of you – my boyfriend and i were even cracking jokes with David Chang (some very inappropriate ones i might add – very funny). BUT my ALL TIME favorite would have to be L’Atelier De Joel Robuchon in Paris. My boyfriend and I waited 1 hour outside the restaurant at the bar, then sat at the “real bar” in the restaurant, did the full tasting menu, stayed to the very close (because we ate so late – we saw a guy walk in with a freshly killed duck to show the kitchen – seriously the thing had feathers) and walked back to the Parker Meridian because the subway was on strike (shocking – apparently this happens a lot in France). But the walk back made the night perfect. Paris is unbeatable at night.

    #6 Favorite object in your kitchen?
    OMG – let me just say I am a kitchen appliance whore – it scares me to think how much i’ve spent since i only buy All-Clad and Le Creuset (i have All-Clad measuring cups and teaspoons for godsake). I have to the All-Clad slowcooker is my favorite – only because i am a sucker for braised dishes. Kitchen Aid mixer and food processor come in a close second. I also love my chocolate fountain (see #2)

    #7 What are you scared of in the kitchen?
    I’m also not a fan of deep frying things – i’ll do it every once in a while, but it’s such a pain a**. I killed a live lobster once to get over that fear ( the “humane” way – through the head) but i’ll have to work up the courage to do that again. I do love lobster though – not gonna lie.

    #8 Do you prefer to cook alone or with others?
    I like to cook for others.

    #9 What country would you move to for the food?
    France. Although the French are very easy to poke fun of at so many levels, the one thing they have nailed is food. I would like to tour the whole country – north to south.

    Tom Kaa Ghai soup from Cooks Illustrated “Soups and Stews” Magazine. The Whole Foods near me had lemongrass and kaffir lime leaves (which are omitted from the recipe – replaced with thai curry paste) and i’ve been waiting to make this soup. It’s so delicious – a really comforting one. I love soup. I think it’s a labor of love – i always use homemade stock. To me there is nothing more comforting than a good bowl of soup.

    I was never a candy-loving child. Often more interested in popcorn and pasta than chocolates and confections. Salty, though a mix of the two is just brilliant. TRAIL MIX!

    Mild. I love ethnic foods which call for ingredients that are inclined to be spicy. It has been interesting finding ways to subdue the inherent heat of Indian, African and Mexican cuisines.

    I am a vegetarian of 6 years, so I guess my answer is meat- though I do occasionally eat fish.

    Most memorable meal?

    The gravy from the first Thanksgiving I cooked completely by myself. I think my ex and I cried when it was finally gone.

    Deep frying things…and undercooking or overcooking meat.

    I enjoy both, but it depends on the person I’m cooking with whether it’s helpful or just irritating ;). My dad’s a great sous chef, as is the boyfriend (lucky me, right?!?), as are select friends. But a big group cooking together is really fun.

    France (just got back from a 4 month stint entirely food-related), Italy.

    Strawberry. It’s my favorite, and they’re so versatile, going with everything from basil to vanilla beans. Plus they’re universally loved, and who doesn’t want that?

    Pesto, leafy green salad, fresh peaches for dessert. Yeah for the City Market and their gorgeous huge bunches of basil for only $2, and their beautiful peaches. I just wish my favorite lettuce guy wouldn’t ALWAYS run out before I get there.

    Most memorable meal?

    My favorite meal was at a small restaurant located in Puerto Vallerta. My Husband and I were there on our honeymoon and stumbled upon it while walking around. This was not a tourist place, in fact none of the staff spoke English, nor did they have an English menu. Luckily my boy speaks Spanish and I ordered a quesadilla that makes me drool just thinking about it. The tortillas were made to order, and the melted cheese was homemade. It was filled with chicken, and caught-that-morning shrimp, octopus, and fish. There was a dipping sauce, (I have NO idea what was in it, but YUM!) and fresh pico de gallo. The whole thing was about 12 inches across and 1 inch thick. All for 80 pesos.

    My Cuisinart mini food processor and panini pan

    What are you scared of in the kitchen?

    Complicated recipes with lots of tricky steps. I always gravitate toward the simple, with familiar ingredients.

    Definitely a hubbard squash. I have an affinity with that variety for some reason. Maybe because it’s like the squash no one wants to pick yet it has so much to offer!
