I visited Loba a few months ago, based on one of your instagram posts and it IS wonderful! I used to live nearby before she took it over and I might not have moved, if I’d known I would have been within walking distance of such a lovely little treasure. Excited to try the recipe!
Such lovely writing in this post! I always look forward to your spotlights on local places. Though I’m (sadly) not local to Chicago myself, I always pass along your recommendations to friends who do live there (gotta spread the gospel).
Fantastic story written on an even more fantastic woman. Loba is such an important part of the neighborhood. My days that begin there always turn out to be the the best of the week.
Love the Winnipeg reference! And your blog! It was probably the third I ever followed after Smitten and The Wednesday Chef. Your aesthetics and taste are always on-point. Thanks for so many great recipes and ideas :) Although I’m in the NE now, my heart remains in the Midwest.
This is a fantastic essay, Tim! Loba sounds like an amazing place and I hope that I’ll be able to visit soon, but in the meantime, I’ll make this recipe. Thanks!

Thrilled to try Loba! Am I missing where the pepitas are in the recipe?

Hi Christine: Though pumpkin seeds sometimes show up in these, pepita is Spanish for seed- so the sesame count, too. : )

I loved this story. Woohoo! I love that you have the measurements in grams! Definitely making these.

This is a wonderful, A+ post in every way. Thanks for sharing the story + recipe.
PS. These seem similar to the cashew bars from Soframiz – are they?

Thanks, Jam! They are similar in format. Flavors and textures are really different: chewy/tender oat base and the topping is much less sweet.

Thanks for all of the nice notes, friends. I appreciate it. And especially appreciate you sticking around when I don’t post that often. YTB!
